
A few weekends back, we were home the whole weekend & hubby got busy in the kitchen! I’d been begging him to try a Key Lime Pie since we’d had so many limes from our tree in the backyard. He trudged back there & grabbed a handful while I made him “graham cracker crumbs” for his pie crust. Apparently I erred when buying the actual graham crackers instead of the pre-crumbled ones.

We made good use of our juicer, and I was happy to be spending a Saturday night at home in the kitchen with my love.

The crust consisted of graham crackers, butter, and sugar- all baked to a golden perfection while we worked on the filling & juicing more limes.

I’m so glad we have a huge island- we are almost always taking up every square inch when we cook.

The filling had lots of yummy stuff, but mostly condensed milk. We poured it in the hot crust, and then let it cool while we cleaned up our massive mess.

We were having our family over the next day & H started working on a few of his dipping sauces for the fish tacos.

The next afternoon, we pulled it out of the fridge & garnished it with a few zests of lime before serving it to our eagerly awaiting family. It was DELICIOUS! Just the perfect light, tangy summer dessert for hot afternoon.

Just a regular Sunday after church & H was excited to try his fish taco again- this time for an audience. We had a few friends & family over, chowed down on waaay too many appetizers, filled up on scrumptious tacos, and managed to save a wee bit of room for the amazing Key Lime Pie.
GOOD NEWS OF THE DAY: Just 3 weeks away from officially launching Grow Soul Beautiful- I’m getting nervous, but oh so excited!






Mmmmm…..you already had me starving with the keylime pie, but fish tacos too???? I gotta go raid my fridge now. LOL!
That’s great that the two of you cook together. We take turns cooking over here, but Nick is definitely the chef in the family. I mostly help him by staying out of his way, and then doing the clean up!
