Pineapple Upside Down Cake

A few weekends back, hubby returned to his new Sunday routine of experimenting in the kitchen.  The fresh summer fruit (or maybe our upcoming holiday trip to Hawaii) inspired him to try baking a pineapple upside down cake.   Anything that start with a stick of butter mixed with a pile of sugar is off to a good start!

It was a gorgeous Sunday afternoon & it was actually Mia’s 3rd birthday! I tried to get a few birthday photos, but she really wanted no part of it.  I was merely blocking her view of the yard and distracting her for squirrel patrol.

I think husband has officially used the Kitchen-Aid stand mixer more than I have.  He’s getting slightly better about his messes, but he always does a great job cleaning up afterwards.  The pineapple corer is still one of my favorite kitchen gadgets.

My favorite part about his new found love for baking is licking the bowl- even managing to wear some of it!   I love photographing his fun time in the kitchen & his cake came out delicious.

GOOD NEWS OF THE DAY: Houston bloggers GTG tonight & Google is coming to speak- so excited!
