
Thanksgiving was a small intimate affair this year at my mom’s house & my contribution was making a squash casserole. I’ve made this recipe a few years in a row now & I really like having a colorful vegetable dish and a tradition.

I always buy too many squash, but I love chopping them up to see the cool patterns nature has hidden on the inside.

Being a total kitchen novice, I get very confused by “4 cups of squash” . They don’t exactly lend themselves to being perfectly or accurately measured. Same thing with the onions, but I went with a ton of extra onions since I love them.

Toss the veggies in the pan get them started & then m ix some eggs and butter together to make the yummy part.

Into a casserole dish they go, mixed with Ritz crackers and some cheese, and then topped off with a final layer of buttery, salty goodness.

And I really should have stopped with that last step in the recipe, but I had some extra cheese and thought “Why not?”. Well, it was too much cheese (I never knew such a thing was possible!), but it was also more difficult to manage 2 hours later when it had cooled by meal time. Oh well- lesson learned

Gram whipped up some delicious eggs & of course brought our pound cake . We had a smaller turkey this year since we all prefer the sides to the meat for Thanksgiving.

John was supervising all the ladies in the kitchen & we ended up with mom’s famous potato salad, homemade cranberry sauce, stuffing, mac & cheese and my squash casserole for the sides.

Not too colorful a plate for me this year, but it was delicious. What can I say- my family is a “carbs” family & the holidays are just the time to splurge!

I heart squash! Your casserole sounds yummy! For the first time EVER in my life, we are going to be home for Christmas (versus going to Chicago). I volunteered to make a squash casserole, too, I was leaning towards a copy cat recipe of Boston Market’s, but now you have given me some food for thought.
I also prefer all the sides! Yum! Stuffing is always my fave!
