Shrimp Victoria

As part of my Life Menu of Awesome that I created during the Pathfinder course, a few of the things on my list related to spending more time with my family and learning how to cook better.  Two weekends ago, I was free & asked mom to make me something for dinner.  I was surprised when I arrived to find  her preparing to cook Shrimp Victoria.  Anything that starts out with that much butter and garlic is off to a fantastic start.  My contribution to the evening was cutting up some cheese snacks and then grating cheese to top our dish.

Gram still likes to help out in the kitchen and we always put her to work- especially when it’s time to do dishes!  I still don’t really care for mushrooms, but since mom was in charge of dinner- in the pan they went with the frozen shrimp.

Toss in some sour cream & prepare some rice or noodles and you have a meal!  Gram cracked me up sipping on my wine, but I didn’t mind sharing.  Toast is always a staple for almost every meal at mom’s house and dinner was no exception.  An easy & delicious meal, great time hanging out with my family and 1 thing marked on my Life Menu of Awesome.  Hopefully will do some more cooking and/or baking this weekend!

GOOD NEWS OF THE DAY: Last minute trip to Fort Worth today for an interesting new project.
