Around Ambergris

This is why we went to Belize!  The absolute epitome of tropical paradise with gorgeous waters, gentle breezes & a pleasant winter sunshine that gave you the warm fuzzies on the inside.

When the sun was out, the waters off the coast of Ambergris were absolutely stunning with their rich shades of greens and blues.  I loved sitting outside under a palapa or on our dock, reading & listening to my iPod, just watching the wave & birds living the good life.

The closest restaurant to Xanadu was Rico’s Bar & Grill, about a 5 minute walk on the beautiful beach.  The food was good, but the strawberry daiquiris were great!   If I’m on vacation, I want to spend every possible minute enjoying the fresh air & beautiful views of the ocean and this restaurant was perfect.

BUSTED- working on vacation! Seeing as I had to drag hubby away from work on Thursday & Friday, I tried not to be too upset when he had to be on  his Blackberry- even if he’d broken it a few days earlier.

We were amazed to discover the tiny island has its own wine bar- Wine de Vine.  We were a little early for sunset, so we decided to stop in for a bottle & were pleasantly surprised.

They had a full deli cooler & we picked out a few meats & cheeses to go with our bottle of wine.

The wine bar was getting ready for Valentine’s Day & any wine bar that’s open at 9 AM is awesome in my book.


GOOD NEWS OF THE DAY:  For the first time in many months, I don’t feel incredibly behind on everything. I’ve still got lots of catching up to do, but it’s at least not overwhelming anymore.
