SS: Harvest

Sunday Scribblings #237: Harvest: As I sat looking out at a beautiful autumn day, I asked my husband what the prompt this week should be and he said, “harvest.”  A perfectly seasonal prompt, (at least for those of us in the Northern hemisphere) this week please tell us what you think of: harvest.

It’s that time of year!  Fall has so many memories & emotions tied to it- the coming of the holiday season, the end of the dreadfully hot summer, kid returning to another year of school.  It’s sometimes hard to get into the fall mood around here as there aren’t many trees that change color & it can be quite hot even into late October.  I don’t live anywhere that I see a harvest very often, but today we are headed out into the country a little bit and will hopefully see some signs of fall.  We did participate in a grape harvest once to kick off the wine making process.  I love the fall apples- especially the Honey Crisp variety, I have been eating one a day!  We’ve been meaning to do pumpkins for years & just might get around to some carving fun this year.  I sort of miss our garden, but I had so little luck growing anything other than cucumbers that there really isn’t much to miss.  This does remind me that I need to go check on our new lemon & lime trees- I saw a few fruits that might need to be harvested.  What do people do with all those gourds?  Are most of them edible or did people really eat them back in the pilgrim days?  Squash I can get into & I need to eat more squash, but I”m totally intimidated by them.  Anybody got any good recipes?

GOOD NEWS OF THE DAY: Going to take H’s 5 nephews out today for a trip to the country.

I never seem to know what to do with squash. However, I love spaghetti squash. I use it as a healthy alternative to spaghetti. One of my favorite recipes is to boil the squash, cut it open, clear out the seeds and fill it with marinara sauce (sometimes with cooked ground beef and onions too), then top with mozzarella cheese and bake for 40 minutes. It’s great! As for other types squash, I haven’t a clue!
